The Russian salad (spanish name of this salad) is a classic among the tapas that you can find in all the bars of our country and although it basically always has the same ingredients, in its different variants in each place it has a different flavour and texture.
The misnamed Russian salad, it seems, is an invention of a Belgian chef of French origin named Lucien Olivier, who emigrated to Russia and created a salad similar to which in our country we call Russian salad.
Basically this salad consists of diced potatoes, diced carrot, peas, small cut green beans, chopped hardboiled egg and mayonnaise.
The vegetables must be cooked correctly, neither too soft nor too hard, due to the sanitary rules of the current legislation, the mayonnaise cannot be home made with fresh eggs but pasteurized egg may be used. Other variants add tinned tuna, green pepper, very minced onion, and canned red pepper for garnish.
