Patatas Bravas

This dish is undoubtedly the king of “tapas” in our country that in the menus of restaurants and bars in its English terminology is simplified with the name and that in many cases the product is not explained what it is exactly.

 

Patatas bravas consist of potatoes cut into irregular shapes, which are kept in water so that the potato loses its starch and later they are blanched in low temperature oil, and they are kept aside for their final frying. This is done at the moment of serving them with oil at high temperature until the potato is finally crisp and golden.

With an accompanying sauce we can find different versions, the most traditional and correct one is to cover with mayonnaise sauce in which a spicy tomato sauce is poured on top, which in each bar and restaurant is made in different ways, another variant is that of add the typical Mexican hot sauces. Another very popular variety is to cover them with an aioli sauce (garlic mayonnaise) or in some cases exclusively with mayonnaise sauce.
